CONVECTION OVEN VARIATION: Prepare the recipe as directed. Roast the vegetables on the Convection Oven setting at 400°F for 8 minutes. Add the chicken and roast for 8 to 9 minutes. Brush with the sauce and roast for an additional 7 to 9 minutes, or until the vegetables are tender and the chicken is done.
Miso-Glazed Salmon with Broccoli
SERVES 2
We have developed a real love of miso, and if you havenât tried it, now is the perfect time. The fermented soybean paste adds a depth of delicious flavor to this fish. Combine the salty flavor of miso with the mirin, which is sweet rice wine, and you have the basis for this sweet-salty-spicy glaze. Add the broccoli, and in just minutes a healthy dinner is on the table.
Nonstick cooking spray
2 tablespoons miso, preferably yellow
2 tablespoons mirin
1 tablespoon packed dark brown sugar
2 teaspoons minced fresh ginger
1 ½ teaspoons sesame oil
8 ounces fresh broccoli, cut into spears
1 tablespoon canola or vegetable oil
Kosher salt and freshly ground black pepper
2 salmon fillets (5 to 6 ounces each)
